About Easy Low Carb Snacks

I started Easy Low Carb Snacks after being diagnosed with gestational diabetes for the second time.  There are a ton of websites that talk about low carb snacks, but I wanted someone to hold my hand and spell it out for me.  I don’t want to hear, “Eat a good selection of fruits and vegetables and stay away from white bread.”  I want “Eat 2 sticks of celery with 1 tablespoon of peanut butter.”  Diabetes is a frustrating, discouraging thing to endure, and I’m so thankful mine will go away.  For those of you who must deal with this day in and day out, I hope to provide a helpful website that tells you exactly what you can eat so you don’t have to put much thought into eating.

When I’m feeling particularly frustrated with counting carbs and checking blood sugar, I have a really hard time thinking logically and coming up with good low carb snacks and meals.  For me, that’s the point where I can easily let it slip away and go for the comfort food.  I find that creating a list of things I can have helps me get through the tough times by eliminating the need for thinking or planning – I can just stuff my face. 🙂 And really, if you choose carefully, you can still have many of the tasty foods, so seeing that list of what I CAN have takes the focus off of what I CAN’T have.

As I’m writing this page, I am 30 weeks pregnant with my third child and looking forward to the end of carb counting.  I have found, however, that this lower carb lifestyle isn’t as bad as I expected and after losing a pound this week, I am actually down to my pre-pregnancy weight still.  Since there is a 50-60 percent chance those with GD move on to type 2 diabetes, I think maintaining a low carb diet is a good idea for awhile.  So what I’m saying is, don’t expect me to run off and leave you once I’ve had the baby – I plan to stick around and bring you as much information as I can for quite awhile. 😉

Oh, and by the way, that’s me eating a cupcake, haha.  It was taken by my then two-year old son and I haven’t bothered to take another one.  So uh, just ignore the cupcake part!  It was for my daughter’s birthday party so I guess it’s okay once in awhile, right?
